Recipes

This recipe if from Kathy's Dad. He's an expert ( really!!) when it comes to cooking. He's taken courses on pizza making and makes one awesome pizza! Thanks Dave for sharing this with us!

I'm putting this on today so you can make it up and have it ready for the weekend.



Dave's Pizza


Dough: Make a day ahead of time... flavors enhance with time.
1/4 c. water, room temp.
1 1/8 tsp. dry yeast
1 tsp. salt
1 tsp olive oil
1 tsp. honey
1 -1 1/2 c. chilled water ( let a bowl of water with ice cubes set for 10 minutes, then measure)
3 1/3 c. flour

Mix 1/4 c. water and yeast. Let stand 5 minutes. Pour into electric mixer bowl and add: salt, olive oil, honey, 1 cup chilled water and flour. Mix on low speed for 10 minutes: adding remaining 1/2 cup chilled water as necessary to develop even textured dough. Try this test. Take a small piece of dough in left hand, with thumb and first finger touching. Using a right hand finger, push dough up from bottom so a bulge of dough is squeezed out from left hand. The surface of this dough should be smooth with no lumps. Dust mixing bowl with flour, before removing finished dough for easier removal. Divide into 3 even pieces. Lightly flour each and form into a ball. Place each ball in a baggy and refrigerate over night.
NOTE: for best results, make dough ahead of time . However this can be made just before using by replacing chilled water with lukewarm water. Cover and let rise until doubled. This crust rolls out thin and makes an excellent pizza!

SAUCE:
2 (28oz) cans crushed tomatoes
8 cloves garlic, crushed ( or 1 1/2 tsp. granulated garlic)
1/2. c. olive oil
3 1/3 tsp. dried basil
3/8 tsp. black pepper
1 3/4 tsp. salt
Combine tomatoes, garlic, oil, basil, pepper and salt. Use about 4 oz sauce per pizza. (Stores in refrigerator about a week.) (I like to add about 3/4 tsp. of fennel, crushed, to this...CH)

This is about the best sauce and crust ever! Top with your choice of vegetables ( peppers, onion, mushrooms, olive, cauliflower, broccoli, tomato, ) fruit ( pineapple, mandarin oranges) meat ( sausage, pepperoni, ham, chicken) and small amount of cheese. (a good mix is mozzerella, provolone, & Parmesan )

Bake in a HOT oven.. 425 until done.
