Recipes

Aurora's Mexican Meat

5# or more of Beef I use about 12 #... and same amount of the rest of the recipe. (cheap is fine... it cooks up tender!)
1-2 Jalapeno peppers - just cut a few slices lengthwise to let the juices out ( 1 adds flavor, 2 makes it a definite spicy meat... 3 makes it good and hot.. )
4 cloves garlic, peeled
2 cups water
1 t. salt

Put all of the above into a crock pot. Cook for 12-24 hours, until it is tender and shreds easily. Remove meat into a pan, shred with two forks. Pour the juice in a little at a time, bring to a boil. Cut up the pepper and the garlic into small pieces and stir into the meat. Continue to boil until the juice is just about gone. Test for salt. Add more if needed. You can use this same recipe using chicken instead - and it is excellent!


Tuna Patties -

These are the approximate amounts for our family of 9.
4 Canned Tuna, drained
1/2 cup finely chopped onion
1 cup quick oats or cracker crumbs
2 eggs - lightly beaten
salt and pepper to taste.
Mix well, fry on lightly greased griddle for about 5 minutes per side. You can stretch this even more by using leftover mashed potatoes in addition to all of the above ingredients.


This is one of my family favorites.. and :) it's cheap to make if you get the hot dogs on sale!
Hot Dog Stew


Scrub and cube 6 potatoes -
Bring to a boil in about 1 quart of water.
4 T. Chicken Broth Powder
1 Onion - diced
Salt and Pepper to Taste
cook til veggies are tender.
Add 1 package hot dogs, sliced about 1/4 inch thick.
Using a potato masher, gently mash a little bit of the potatoes to thicken the soup.
(You can use flour and water to thicken it more if you'd like)
Let simmer for about 1/2 hour to let flavors blend.

Kathy's family made this using celery and carrots also. Sounds good and adds more vegetables and bulk! I'm going to try it next time!

  1. The Mexican meat was given a "thumbs up" by everyone in this house. We used some of it in subs... toasted bread, melted cheese..very good.
